  • 1 cup Chickpeas (cooked)
  • 1/4 cup Tomate Purée
  • 1 tsp Harissa
  • 1/2 cup Baby Spinach
  • 1 Egg
  • Sea Salt & Black Pepper (to taste)


  • In a small pan over medium heat add the chickpeas, tomato purée, and harissa. Bring to boil, reduce the heat down to simmer, and let cook for about 10 minutes.
  • Add the spinach and cook for another two minutes. Create a pocket in the middle and crack the egg into the pocket. Cover the pan and cook until the egg is set, about five to six minutes.
  • Season with salt and pepper and enjoy!

    Refrigerate in an airtight container for up to three days.
  • Serving Size

    One serving is equal to approximately 1 1/2 cups.

    Add onion and bell pepper.

    Add feta cheese and fresh herbs.
