Saffron Chicken & Mashed Cauliflower

  • 1/2 Lemon (juiced)
  • 1/4 tsp Saffron (ground)
  • 1 tsp Sea Salt (divided)
  • 10 oz Chicken Breast (boneless)
  • 1/2 head Cauliflower (cut into florets)
  • 1 1/2 tsps Extra Virgin Olive Oil (divided)
  • 1 tbsp Parsley (chopped)


  • In a bowl, add the lemon juice, saffron, half of the salt, and chicken breast. Let the chicken sit in the marinade for about 10 minutes.
  • Meanwhile, add the cauliflower to a pot of boiling water, cover, and cook for five to ten minutes or until tender. Drain and mash with half of the oil and the remaining salt.
  • Heat the remaining oil in a pan. Add the chicken breast and cook for 12 to 15 minutes or until cooked through, flipping halfway.
  • Serve the chicken with mashed cauliflower. Season with parsley and enjoy!


  • Leftovers

    Refrigerate in an airtight container for up to three days.
  • Serving Size

    One serving is equal to 1/2 cup of mashed cauliflower with chicken.
  • No Saffron

    Use turmeric instead.
  • More Flavor

    Add zucchini or broccoli.
