Ingredients
- 1/2 Lemon (juiced)
- 1/4 tsp Saffron (ground)
- 1 tsp Sea Salt (divided)
- 10 oz Chicken Breast (boneless)
- 1/2 head Cauliflower (cut into florets)
- 1 1/2 tsps Extra Virgin Olive Oil (divided)
- 1 tbsp Parsley (chopped)
Instructions
- In a bowl, add the lemon juice, saffron, half of the salt, and chicken breast. Let the chicken sit in the marinade for about 10 minutes.
- Meanwhile, add the cauliflower to a pot of boiling water, cover, and cook for five to ten minutes or until tender. Drain and mash with half of the oil and the remaining salt.
- Heat the remaining oil in a pan. Add the chicken breast and cook for 12 to 15 minutes or until cooked through, flipping halfway.
- Serve the chicken with mashed cauliflower. Season with parsley and enjoy!
